TK Ranch Beef Half Information
Understanding the math behind the meat
We sell our halves differently than most producers. Most sell a half based on its "hot hanging weight" - after an animal is processed the carcass is hung up and weighed while it is still warm. Usually a customer is charged a per pound price based on half of this carcass weight - hence a "half". The half is then placed in a cooler to "dry-age". During this process the half will shrink (dry) about 8%. When the half is ready to be cut up and packaged approximately 35% of its weight will be bones and fat that are discarded. So if a half weighed 400 lbs at the beginning of the process a customer will end up with 228 pounds of boneless cuts in their freezer (35% + 8% = 43%. 400 X 43% = 228). In addition to this most producers also charge their customers the cutting and wrapping charges and for delivery. Needless to say, a complicated process to fully understand. When we sell our customers a TK Ranch Dry Aged Beef Half we keep it simple. We charge a flat price per pound which includes cutting, wrapping and delivery to a refrigerated depot in either Red Deer, Edmonton or Calgary. The price is based on the weight of the meat that goes into your freezer - not on the hot hanging weight. This way you don't have to worry about the math. All of our beef is very well trimmed and our ground beef and stew are at least 85% lean. Our meat is also vacuum packaged to extend its freezer life. All cuts are also well identified so you know what cut is what in your freezer. You will receive approximately 100 kgs or 220 lbs of beef in a half - a good investment and your best choice economically. What is included in a half? - 8 Tenderloin Steaks, 1/pkg

- 120 Lean Ground Beef, approx 454 grams each
We can customize your order, but this may take a few extra weeks depending on our processing schedule. You can also substitute some of the processed products in lieu of the ground beef. In this instance we would simply charge you a small processing fee in addition to the price: - Patties $0.70/lb
- Smoked Meats (Smokies, Garlic Sausage, Pepperoni, Salami or Summer Sausage) $1.75/lb
- Fresh Breakfast Sausages $1.00/lb
Sharing with friends or family? We will gladly divide a half into as many as 4 equal portions (as closely as possible) for no extra charge. We will weigh, box, invoice and individually identify each person's portion so all you have to do is hand out the boxes on your end.
